Place quinoa in a medium pot & rinse with water. Strain out water; enlarge broth & turn heat to high. Bring to a boil, then reduce heat & simmer uncovered till liquid is absorbed, about fifteen minutes. Cool & toss softly with feta, almonds, vegetables & vinaigrette. Serve.

Basil-Chive Vinaigrette:

2 tablespoons lily-white vino vinegar

Juice of 1/2 lime

1/4 cupful plus 1 tablespoon extra-virgin olive oil

2 tablespoons minced fresh chives

1 tablespoon minced fresh basil

Salt & pepper

Combine vinegar & lime juice in a little bowl. Gradually whisk in olive oil till mix is smooth & uniform. Stir in chives & basil. Season with salt & pepper to taste.

*To roast sliced almonds, announce in an ungreased baking pan. Place in a 350F oven & bake ten minutes or till golden brownish & fragrant; stir once or twice to ensure even browning. Note that almonds will remain to roast slightly after removing from oven.
