Brownie cupcakes make a deliciously filled cake, peculiarly tasty with a sweet accession of casual raisins. Brownie Cupcakes
3 oz. (3 squares) unsweetened chocolate
1/2 cupful butter or margarine
11/2 cups sugar
3 eggs
11/2 teaspoons vanilla
1 cupful all-purpose flour
1 cupful chopped walnuts
1 cupful Sun-Maid Natural Raisins
Buttercream Frosting
1 stick (8-oz.) butter, softened
1 package (16-oz.) powdered sugar
1 teaspoon vanilla extract
Dash of salt
2 to 3 tablespoons milk
Heat oven to 350F. Grease or course twelve (23/4-inch) muffin cups with paper baking cups.
In oversized saucepan, over really low heat, mix cocoa & butter; heat just till melted, stirring occasionally. Remove from heat. Stir in sugar; immingle well.
Blend in eggs & vanilla. Stir in flour, walnuts & raisins. Spoon batter into prepared muffin cups, filling almost full.
Bake at 350F. for thirty minutes. Cool on cable rack. Sprinkle with powdered sugar or frost as desired. Makes twelve cupcakes.
Frosting:
In little mixing bowl, mix premier four components & 2 tablespoons of milk. With electrical mixer, mix on low till blended. Continue to bunk on high till fluffy, adding supplemental milk as wanted for spreading consistency.
