History Of The Espresso

Monday 27 September 2010 @ 5:58 am

There is nothing great than sipping a hot cup of coffee in the chilly mornings. It simply feels great having the espresso. Yes, we are talking espresso, which is one of the most famous and preferred coffee types across the globe. Well, since we started talking about espresso, why not take a brief sneak peek into its history and what exactly it is. What do you say?

Basically espresso is a flavorful and strong coffee beverage prepared when hot water is forced under a high pressure and made to pass through finely ground coffee beans. The color of the coffee is typically dark brown with brown/red colored foam on the top. Espresso is commonly served in small portions.

Unlike other drip-brewed coffees, espresso is identified with its robust flavor and thick consistency. Following its potency, straight espresso or espresso served without milk or sweetener is generally considered to be an acquired taste. In the United States, this espresso is served in small amounts known as shots. Many avid coffee fanatics even order single or double espressos along with a glass of water to void the taste.

Espresso was basically originated in Italy in the 20th century. Indeed Espresso is an Italian word that means fast. A gentleman named Luigi Bezzera made a coffee machine that had four divisions and a boiler in 1901. He even got the machine patented. This machine used to force boiling water and steam via coffee into the container or cup. This very machine is regarded as the inception of espresso.

In 1903, Desiderio Pavoni purchased the patent from Luigi Bezzera and the Pavoni Compnay started developing coffee machines in 1905 which were based on Luigis patent. The machines produced by the company came to be known as the La Pavona and became famous immensely. These machines even reached the America in 1927.

The flaws in these early machines soon came forward. The boiling water and the steam that was forced via machine gave coffee a certain kind of burn flavor. So, Cremonesi in 1938 built a piston pump that forced hot water rather than boiling water through the coffee. Moreover, this design was also incorporated in Achille Gaggias coffee bar. During the World War II the Gaggias small quantity of machines were destroyed by a bomb and any further developments of espresso machines got hindered.

As the war came to the end, Gaggia began manufacturing a viable piston pump. As the machine used the spring lever, it was considered very innovative. Following the use of the spring lever, the coffee could be pressurized which was entirely independent of the boiler. These earlier machines used to employ the force of the boiler pressure to force water through the coffee. The coffee that was produced from this machine characterized a Creama which became the hallmark of espresso coffee. In true terms, this was a major inception of espresso machines.

Further in 1961, M Faema made an improvement in the Gaggias machine. Faema developed machine that consisted of an electric pump. This pump used to force water through the coffee. This machine underlined the inception of pump driven machines which paved way for the modern espresso machines.

How To Build Your Own Wine Cellar

Sunday 26 September 2010 @ 4:59 pm

What does a wine cellar do? Think before you answer, because you need to be absolutely certain of the purpose of a wine cellar before you begin to build a wine cellar of your own. Increasingly, given the rising number of wine aficionados around the world, a residential wine cellar is gaining ground as a status symbol for both the mature connoisseur as well as the entry-level enthusiast, but its utility extends far beyond that.

Essentially, a wine cellar is a storage space that protects wine from potentially damaging external influences. Because wine is a natural, perishable food product, it is vulnerable to exposure mainly from heat, light, and humidity. However, if stored properly, wines not only retain their quality, but also improve with regard to aroma, flavor, and richness as they mature.

Building your own wine cellar
Before you begin, remember that the ideal wine cellar must provide constant temperature, humidity, and darkness. Add to that well-ventilated and clean surroundings, and your favorite Chardonnay and Cabernet are in good hands. So what are the basic steps to keep in mind?

- The more you research, the better your chances of building the perfect wine cellar. The Internet offers a vast number of sites that offer wine cellar kits. Prices for these kits may range from USD 2000 to about 4000, but thats a slightly conservative estimate, and process can increase depending on the quality of your wine cellar racks. Bottom line: dont scrimp on costs because ultimately, your expensive wines will suffer.

- Depending on the size of your house, you may choose to place your wine cellar below or above ground. Obviously, those with larger houses can accommodate wine cellars above ground, but the basement is the safest bet because it will support the combined weight of the cooler and the racks.

- Your area selected, begin work on insulation. All inner walls must have at least R-11 insulation while outer walls and the ceiling must have at least R-19. If you choose the basement, a vapor barrier with a concrete sealant over it will be adequate for the floor. The vapor barrier usually a 6mm polyethylene plastic sheet should face outward (the warm side of the cellar), as opposed to the cold side. This is something you have to be careful of: if the sheeting faces inward, damp will set in and damage the walls.

- Next, install a door. The ideal door must be solid, windowless, and insulated NOT wooden, because they are not adequately insulated. Also ensure that the weather stripping is adequate and the door is airtight.

- A very important step is to place the cooler, which is ideally placed at the back of the area for aesthetic purposes! Typically, the cooler should be placed between crosswise boards about 6 inches down from the ceiling.

- Finally, finish the walls and lights. Use a drywall to finish off the walls and cover up with durable strip paneling. When installing the lights, avoid recessed lights because they make the cellar less than airtight. Aim for simplicity and youll be ok. But remember, light switches are best placed outside, or else they get in the way of your wine racks.

The Joys Of White Wine

Saturday 25 September 2010 @ 1:15 pm

Red wines have been very popular lately, thanks to medical reports about their antioxidant and heart-protecting properties. It’s true that red wines are amazing, but that doesn’t mean the other less noticed kinds of wine are bad. White wines are in fact divine, when it comes to their subtle aroma and taste it’s more than the senses with a right amount of sweetness and delicately combined with mild sources.

Wine service at a nice restaurant can be an unneccessarily difficult ordeal. The following tips will allow you to follow the customs of wine service with ease and confidence.

Many people are confused about wine, especially whites. This makes many estranged from the joys of the cellar. For the uninitiated, here are some of the most common kinds of white wine:

1. Chardonnay – The most renowned type of white wine is very much befitting of the superstardom. This type of wine originated in France from grapes of the same name. Its flavor reminds one of the fruity tastes of pineapple, peach, citrus, apple combined with luscious tang of vanilla, oatmeal, and nuts. Chardonnay looks very elegant in a glass with its deep yellow to light greenish transparence.

2. Sauvignon Blanc Another wine that hails from France, particularly around the Loire valley, the Sauvignon Blanc can also be found in New Zealand. Its flavor evokes freshness of the pastures around its area, reminding one of the aroma of freshly cut grass, giving the wine an herbaceous flavor with hints of fruits. It is best to enjoy this wine immediately as its fresh flavor doesn’t last long.

3. Chenin Blanc another product of the Loire valley, this exceptional wine usually goes unnoticed as the underdog of the wine kingdom. However its flavors are truly magnificent with hints of tangy pineapple and lime combined with the sweetness of honey and licorice. This one lasts longer and can keep up to 10 years. Art of Wine Tasting.

4. Gewurztraminer This one comes from Alsace, France. A wine with a louder character, with hints of spice and floral taste.

5. Pinot Gris this crisp and smoky wine with hints of apricot comes from Alsace, North Eastern Italy, and New Zealand.

6. Riesling a noble tea-like, honey flavored wine comes from Alsace or Clare Valley in France, or from Germany.

There are so many other kinds of white wines, all evoking elegant and luscious flavors that make them perfect companions for soft cheeses, white sauced pasta, fish and poultry. Of course one can have a glass with any meal or by itself depending on ones preference.

When it comes to the joys and pleasures brought about by wine, whites can compete with reds. To know more about white wines, it is best to befriend a wine dealer. Cheers!

When choosing a wine from a restaurant’s wine list, the main goal is to accomplish a suitable pairing with the entrees of your party. If the food orders are too different to generalize with one wine, consider purchasing splits or ordering by the glass. Waiters and sommeliers are there to answer your questions, but availing yourself to their services and advice will be much more beneficial if your questions are relatively specific.
