Real Pie history
Pies were roasted in America as shortly as the earlier settlers set-up housekeeping on dry land. Beyond mere preference, however, there was a practical cause for making pies, peculiarly in the hard & primitive conditions endured by the premier colonists. A piecrust used less flour than bread & it did not call for something as complicated as a brick oven for baking. All figure prominently into the complicated history of this fastidious genre of food. The fundamental conception of a pie is taken to mean a mix of components encased & roasted in pastry.
